From tree to bottle, the process takes Peter and Anne Lorriman of Windlee Farms less than 24 hours. “To be maple syrup the sugar content must be 66 per cent,” says Anne, who oversees the process that turns sap from 500 taps into syrup in the sugar shack.
Sustainable Syrup Year After Year
Each spring, Peter taps just 10 acres of their 30-acre sugar bush. “The health of the bush is the most important thing,” he says. “For the health of the tree, most trees have only one tap.”
Peter’s care and eye to sustainability pays off. The average maple tree produces enough sap to make one liter of maple syrup. But in 2020, Windlee Farms' trees produced 1.8 liters of maple syrup.
